Rakia based on plums and honey without using sugar is made by Anatoliy Korystyatinets, the founder of the nursery “Vash Sad” from Korets. According to him, this drink is unique and nobody makes it in Ukraine. This is reported by techhorticulture, writes agronews.ua.
“The process of making rakia starts with the fermentation process using wild yeast in special containers. After that, double distillation takes place on special equipment, because the strength of the alcohol obtained reaches 70 °,” said Anatoliy Korystyatinets.
Then, when the strength of the drink reaches 50 °, it is poured into oak barrels and aged in them for a year. As a result, the strength of the finished brandy is 49 °.
According to him, rakia is made using plums (necessarily pitted) and honey. Around 200 liters of brandy can be produced during the season.
As a reminder, rakia is a strong alcoholic drink made by distilling fermented fruit popular in the Balkans. The main difference between brandy and vodka is that the distilled product is aged in oak casks.
