These new restaurants are released monthly, with the April update revealing that Montrose in Edinburgh has won a coveted place on the guide.

Michelin said: “Situated close to The Palace of Holyroodhouse, this former 19th century pub has been converted into a wine bar and restaurant by the owners of Timberyard.
“The upstairs dining room has an intimate atmosphere due to its soft lighting, rustic decor and small capacity.
“The cooking – which comes in the form of a set menu – is characterized by big, bold flavors, which are displayed in the game tortellini or piquant green tomatoes. In the bar, oysters, charcuterie and plates are offered small others alongside great plates.” a wine list that promotes lesser-known regions.”

Montrose opened in Edinburgh’s Abbeyhill area at the end of 2023 as the Radford family sought to ‘evolve Timberyard’s ongoing dining legacy’ with the continued support of head chefs James Murray and Moray Lamb.
Lamb said: “At Montrose, the ethos is simple. Find great seasonal produce. Cook it well and season it perfectly.
“Downstairs in Montrose, the menu is inspired by the world’s great wine bars. An exceptional wine list, complemented by tantalizing, delicious plates, many with a European influence.
“Similarly, the flavors of the world are not limited to the dining room on the first floor with its four-course set menu. The main components of the dishes are locally sourced.
“Refined cooking, with clean plates of food, but still a bit of fun and nothing too challenging for the guests.”
