Although by now another branch of this shop has opened which is in Lalghati, but even today the crowd stays only in the old shop.

Bharat Vijayvargiya, director of Mamaji Jalebiwale says…. We are basically residents of Manasa, Mandsaur. Dada Lakshminarayan Vijayvargiya used to do Jalebi business in Manasa. Father Ramakant Vijayvargiya had 5 brothers. The financial situation was not good. The situation worsened after the death of grandfather, so at the age of 15, father came to Bhopal with his uncle to look for work. Tau took over Manasa’s shop in his hands. However, the business did not work and the shop had to be closed.

Father started working in a salt shop to earn his living. After living together for some time, uncle went to Indore. There was a business atmosphere in the home, which my father had seen since childhood. She started making namkeen at home. Also started selling Shrikhand, ice cream and Indori Lassi in summer. Also started taking orders for cooking food at wedding parties.

In 1978, he started selling Rabdi in the Chowk. When the store gained momentum, the idea of ​​expanding it came. Since childhood, he had seen his grandfather making Jalebi at home, so he started serving Jalebi with Rabdi. At first the response from the customers was not good, but after the users accepted it, its demand increased significantly within a short time.

People used to call his father Mama Ji, so he named his cart… Mama Ji Jalebi. When Rabri Jalebi lovers started coming, the cart left the Chowk and reached the big event and fair to be held in Bhopal. They started setting up food stalls here. When we grew up, we intended to take the family business forward.

The wheels of the cart were stopped in 2003 and the journey of Mama Ji Jalebi Wale began… as a shop in old Bhopal. Father Ramakant Vijayvargiya died in 2020. He is not with us, but because of his more than 100 year old recipe, Jalebi Mama ji is famous today.

Choosing a family business after managing a hotel

Bharat Vijayvargiya said. After dad, we move the business forward. Now we have 2 branches. One here and the other in Lal Ghati. That shop is run by my elder brother and my nephew Harsh. He has studied hotel management. Instead of a job, he has chosen a family business. He says that even after opening the shop in Lalgati, many customers from that area come to old Bhopal to taste Jalebi and Rabri.

Keep the flour mixture overnight

Sieve the flour, add water to it and keep it overnight. Beat well in the morning. After this, with the help of a cloth, it is placed in a pan and fried in ghee on a low flame. When the first and last jalebi is cast in a pan and the color becomes uniform golden, then it is put in the syrup.

Mix 50 kg of sugar in 50 liters of water.

Boil 50 kg of sugar thoroughly in 50 liters of water. While boiling, add milk little by little to clear the syrup. By doing this the syrup becomes clean and pure. We prepare glass syrup. Glass syrup means it is so clear you can see through it.

wax Milk comes to Rabdi from Sehore

Vijayvargiya said that about 5 kg Rabdi is made from 40 liters of milk. Milk is boiled at a specific temperature. 2 kg of sugar is added to it. To make a special wax rabri, the confectioner keeps a needle in his hand. As a layer forms on the milk. With the help of a needle, the layer of cream is separated and deposited on the edge of the pan. When there is about 5 kg of milk left, the condensed milk is kept to cool. After cooling, the cream layer is mixed into the condensed milk. This is how special wax rabri is prepared for Mama Jalebi.

Water film shooting and ganga politics happened

Vijayvargiya said that former President Shankar Dayal Sharma, businessman Aditya Birla, film director Basu Chatterjee, Sunil Lahiri who played the role of Laxman in Ramayana also tasted the rabri-jalebi of our place. The films Gangajal and Rajneeti were shot in this shop. Whoever comes to Bhopal for a TV or film shoot, definitely visits our store. Some time ago, Amitabh Bachchan’s granddaughter, Navya Naveli Nanda, had come to the shop.

More than 20 types of namkeen

Rabri Jalebi, Uncle Jalebi seller, is famous. There is no comparison to the taste of the snacks available here. The most important thing is that you can make the namkeen yourself. More than 20 varieties of namkeen are available here. Along with snacks, people also come here to eat Poha-Jalebi, Chole-Bhatura, Chaat, Golgappa.
