And when it comes to wine, you can bet that a red from French vineyards will be very different from one produced with grapes from, say, Chile or New Zealand.

The same goes for ice cream, as Peacock founder Jennifer Clapp knows all too well.

“North American ice cream is made with more than double the cream used for gelato,” he says of the scoops now available at his new store in Glasgow’s Southside.

“That gives it a richer, more luxurious taste.

“Then there are more ingredients in this style of ice cream like caramel twirls or cookie pieces, and although gelato shops may change their menu daily, we have unique flavors.

“Our most popular is the Canadian Campfire which is roasted marshmallow ice cream with a homemade Graham Cracker and chocolate chips, so like a s’more.”

Hoping to recreate a taste of Canadian home in Glasgow’s Southside is what first prompted Clapp to launch Peacock Ice Cream from her home kitchen at the height of the pandemic.

“I feel crazy doing it because I’ve never done anything like this,” he said at the time.

“On the other hand, it’s unprecedented times so you think why not? Why not go wild?”

And so, the budding entrepreneur set about creating all his products from scratch, advertising them to local community groups online and personally delivering them to individual addresses in a completely practical, small-batch operation.

“It all started with the Mango Honey flavor which was made using the Pakistani Honey Mangoes that are sold in Pollokshields and are very popular during the summer.

“I combined them with chunks of Scottish shortbread for ice cream and it all grew from there.

“I moved into a commercial kitchen in Govan for three years where the focus was entirely on wholesale, and when the lease was up I thought it was time to try and add a customer facing element with a shop .”

That’s how, four years later, Peacock’s first scoop shop opened on Battlefield Road.

Painted in a striking royal blue to match its namesake feathers from the animal kingdom, inside you’ll find a chest freezer full of equally colorful ice cream creations such as lemon and blueberry curd, cherry or orange blossoms with licorice swirls.

If a classic cone or cup isn’t your thing, it doesn’t matter with a menu that also extends to root beer or cola floats and delicious hot chocolate drinks for the colder months ahead.

“There’s this sort of small food scene here with so many independent shops and cafes like Big Bear Bakery or Punts Pots, but there’s never been any sense of competition because of that.

“When we were fitting out the shop, so many people dropped in to wish us luck or introduce themselves and since then we’ve had them telling others to come and stay.

“I feel so lucky to have found the perfect location in the middle of such a supportive community.”

Happy to be surrounded by new neighbors that also include Frank’s Pizza, Grain and Grind, French Monkey and more, Clapp is carving out its own identity in one of the city’s most exciting hot spots.

Underestimating the demand for her scoops, the shop owner says she had to order a new freezer with three times the storage space within weeks of opening, while ice cream production has been non-stop to ensure they avoid selling out over the weekends.

Looking back to where it all started with Ode to Pollokshields ice cream in July 2020, he said: “I really thought Peacock’s would be a sort of stopgap project until things got back to normal after closing and I could go back to my. 9-5 job.

“I couldn’t have imagined then that one day I would open my own shop.

“Even though it’s been busy, and overwhelming at times, the whole thing has grown so organically.

“Because there’s already an established customer base for Peacock’s, it’s been so nice to have people asking for flavors we’ve sold before.

“It’s so amazing to be able to meet the people who have been booking for years face to face and we’re so happy to be part of the Battlefield community.”

Peacock’s Ice Cream is located at 62 Battlefield Road in Glasgow.
