Director Ashok Kushwaha says his great grandfather started this shop. Gajak was earlier made and sold here. Seeing people’s preferences change with time, they started serving breakfast. Started making Kachori, Samosas and Imarti.

Ashok started helping his grandfather and father in the shop at the age of 10. He says, ‘Imarti and Kachori are the first choice of the people here. Not only Gwalior, but people coming from outside also definitely taste it. Among them, Imarti has more fans.

There is no table to be seen outside the shop because the taste of Imarti has become its identity.

The shop remains open 18 hours

Ashok Kushwaha says his shop opens at 6 am and remains open till around 9 pm. Imarti and Kachori lovers flock to the shop, which remains open for about 18 hours, even before the shop opens. Some people come here every day, while some arrive within 2-3 days. However, there is no concrete figure as to how many customers arrive here every day. According to estimates, this number is more than a thousand.

The shop operator also says he did not keep track of how many of his items are sold on a daily basis. They prepare it according to the demand. The price of Imarti is Rs 200 per kg. At the same time, it is sold at Rs 10 per piece.

Imarti is made without seeing

Ram Avtar, the artisan who makes Imarti at the shop, said he has been working here for 40 years. He learned to work here. Now his hands are so engrossed that he keeps doing Imarti while talking to the other person and even without looking at him. The special thing is that the size and texture of Imarti is the same. In such a situation, it can be said that Imarti is not made on his hands but on his gestures.

A batter is made from urad dal

Imarti is made from urad dal. After preparing its batter of urad dal, giving it a shape, it is deep fried. After this it is soaked in syrup and then served hot.

This Imarti is going to Delhi

The shop operator says fresh and pure Imarti is made here every day. This is the reason why people take it to Jhansi, Agra, Mathura and Delhi. There are many such customers, when they go to Delhi by Shatabdi Express, they definitely take the Imarti here. In such a situation, this flavor reaches Delhi in four to five hours.
