A restaurant with a selection of over 200 Italian wines to open next month Achi-News

The new destination mixes modern and traditional wine styles to showcase different Italian regions and is the first venture from Edinburgh-born sommelier James Clark, who has spent his hospitality career in some of the city’s finest restaurants, from including Divino Enoteca and The Palmerston.

Of the launch, Clark said:I am extremely excited to have reached this point and to be ready to open the doors and have so many people to thank for helping me get here.

“From all the wonderful local craftsmen I’ve used, to my friends and family putting up with me talking about nothing else for the last 6 months, I’ve been so lucky to have the support of so many wonderful people .”

Set over two floors on Deanhaugh Street, Sotto comprises an Enoteca (wine bar) upstairs and a Trattoria downstairs led by Calabrian head chef Francesco Ascrizzi, who brings experience of working in some of Edinburgh’s most respected Italian restaurants, including Divino Enoteca, Mono and Tipo .

The menu will combine seasonal British produce with classic Italian cooking, with dishes changing regularly to “celebrate the best ingredients from both countries”.

These are followed by homemade pastas including Tagliatelle with porcini, and maniche Mezze with venison ragù, and seconds including shoulder of lamb with artichokes and lentils and sole with caper butter and salsa verde.

To finish, diners can enjoy Marsala poached pear with sweet ricotta and cannoli, or ‘Zuppa Inglese’ with Alchermes liqueur and crema pasticciera.

They will also have the option to order ‘Fai Tu’ which will bring four courses of feast-like meals to share, according to the chef’s choice.

“I have fallen in love with Italian food, wine and culture over the past decade, and I hope Sotto will be an expression of the warmth and welcoming nature I associate with the country,” continued Clark.

“There is so much variety in the food, the wines and the landscapes, and we can’t wait to share our interpretation of that with the people of Edinburgh.”

Sotto will seat 36 downstairs, including an intimate private dining room for up to eight guests.

Open from 10am, the restaurant will operate as an espresso bar during weekday mornings, and an Italian-influenced brunch menu will be served at weekends, with dishes including Truffle polenta with wild mushrooms and fontina cheese; ‘Frittata di pasta’ with Tropea onions, potatoes and Scamorza, and Brioche with gelato.

Seating 25, the wine bar will host complimentary tasting sessions every other Thursday night, showcasing a specific producer, region or grape variety, with the wines being poured throughout the night and available to take home.

Clark said: “It’s so exciting to be opening in Stockbridge, the neighborhood where I’ve lived for the last 10 years.

“It’s got such a vibrant food and drink scene and it’s a part of the city that people love to come to for a day out, and we’re really proud to be a part of that now.”
