A former Claridge’s chef joins a luxury hotel in Scotland Achi-News

He then moved to the UK as he took a place in Gordon Ramsay’s group at the Savoy Grill, before spending time at Pétrus.

Notably, the chef also worked for Claude Bosi at the two Michelin star Hibiscus.

Of his new role, he said: “I am honored to join the exceptional team at the Old Course Hotel and showcase my contemporary interpretation of Scottish cuisine.

“With St Andrews’ rich culinary heritage and access to incredible local produce, I look forward to creating memorable dining experiences across the resort.”

Committed to celebrating local Scottish food, Finn’s new menus will showcase the best seasonal produce from the area.

This month, a wellness-focused and predominantly plant-based menu will debut at the resort’s Spa Café, with dishes ranging from super-nutritious food and wild rice salads to goddess green sandwiches, vegetables roast and chia desserts.

Elsewhere, in the refurbished Swilcan Loft and West Deck, menus will focus on informal sharing options including Great Glen venison charcuterie plates and lobster rolls made using locally caught St Andrews Bay lobster .

Finn will also oversee the Road Hole Restaurant and the 3 Rosette AA’s “most famous golf pub”, the Jigger Inn.
